la mia conversione - my conversion

no, non sto parlando di conversione religiosa, per quanto il nuovo papa mi piaccia assai assai e potrei persino pensare di riconsiderare il cattolicesimo. la mia conversione è molto più terra terra e riguarda il cibo.

no, I'm not talking about religious conversion, even if I like our new pope very much and I coud even think of reconsidering catholicism. my conversion is practical and has to do with food.

la blogosfera pullula di gente convertitasi alla pasta madre. io sono sempre stata scettica al riguardo, in parte per la lunga e laboriosa gestazione richiesta dalla stessa, ma soprattutto, perché ho sempre pensato che mi avrebbe portato ad aumentare in maniera esponenziale il consumo di prodotti a base di glutine. e il glutine di frumento, il mio gruppo sanguigno e l'ago della mia bilancia non sono esattamente amiconi. anzi. proprio in considerazione di questi fattori, ho da tempo iniziato a ridurne il consumo al minimo e a sostituirlo con cereali privi di glutine (miglio, quinoa, riso) o nei quali lo stesso sia presente in misura ridotta (farro).

I've always been skeptical about this, partly because of the long and difficult making of required by the same, but more importantly, because I always thought that it would have led me to an exponential increase in the use of products containing gluten. and wheat gluten, my blood type and the needle of my scale are not exactly buddies. indeed. precisely in view of these factors, I have long since begun to reduce its consumption to a minimum and to replace it with gluten-free cereals (millet, quinoa, rice) or in which gluten is present to a lesser extent (spelt).

un paio di settimane fa ho scoperto un metodo rapido e indolore per produrre la pasta madre di farro partendo dal lievito madre di farro disidratato che avevo in casa. ho perciò dato vita al mio lievito madre. mi dicono che alla pasta madre venga solitamente dato un nome. siccome io nella scelta dei nomi sono monotona, mi astengo e lo chiamo semplicemente la creatura. 

a couple of weeks ago I discovered a quick and painless method to produce spelt sourdough starting from that dehydrated sourdough spelt I had at home. I therefore started my own sourdough. I am told that each sourdough starter is usually given a name. since in the choice of names I am monotonous, I avoid it and simply call it  the creature.

e con i restanti 20 grammi di lievito disidratato della bustina ho seguito pedestremente il consiglio di chi aveva postato la ricetta ed ho prodotto dei panini di farro ai semi di zucca davvero ottimi.

with the remaining 20 grams of dried yeast I slavishly followed the advice of those who had posted the initial recipe and I produced some spelt rolls with pumpkin seeds which tasted really good.

dopo aver fallito miseramente il tentativo di fare dei crackers al primo rinfresco, durante la settimana, venerdì mi sono data al secondo rinfresco e ho impastato il mio primo vero pane di farro con lievito madre. ho lasciato l'impasto al chiuso in lievitazione tutta la notte e la mattina ho dato forma ai panini che hanno poi nuovamente lievitato dento il forno spento e chiuso per almeno altre tre ore. dopodiché li ho spennellati con un po' d'acqua, ne ho cosparsi metà con semi di zucca e metà con semi di sesamo e li ho cotti per una ventina di minuti in forno preriscaldato a 200°C. data la mia conversione di cui sopra, ritengo superfluo dire che erano ottimi. 

after having miserably failed an attempt to make some crackers on the occasion of its first refresh during the week, on Friday I made the second refresh and mixed my first real sourdough spelt bread . I left the dough to rise inside a closed bowl throughout the night and in the morning I gave shape to some rolls that have then been left to rise again inside the switched off oven for at least another three hours. after that I brushed them with a little water, I sprinkled half of them with pumpkin seeds and the other half with sesame seeds and baked them all for about twenty minutes in a preheated oven at 200 ° C. given my above mentioned conversion , I consider it unnecessary to say that they were great.
